This first one is amazing!!

makes 8
Gourmet Chocolate Cakes:
7 oz semi-sweet chocolate chips
3 tbls butter
1 cup sugar
2 tbls flour
3 eggs
- Melt chocolate chips with butter, set aside.
- Mix sugar and flour, set aside.
- Whisk eggs together then blend in the sugar/flour mix. Add melted chocolate mix.
- Put batter in individual ramekins, filling them half full. Bake for 15 mins at 400 f (the top will be hard but the inside is soft and chocolaty!)
Serve with vanilla ice cream or whipped cream & berries.

makes 12
Garlic Salami Knots: 14 oz pizza dough
2 oz salami
2 cloves garlic
1 medium jalapeno chili
1 large egg
coarse salt, for sprinkling
- Preheat oven to 400 f. Grease a baking sheet.
- Finely chop the salami, garlic and seeded jalapeno. Mix up in a bowl.
- Roll out the pizza dough and cut into 12 pieces. 1 piece at a time, roll the dough between your hands to form 12, 7-inch long ropes. Tie each piece into a knot and place on the baking sheet.
- Beat the eggs and brush over the knots. Sprinkle knots with the salami mix and coarse salt.
- Bake until golden brown, about 18 mins.
Serve warm with spicy brown mustard, or whatever you like!

serves 2
Chicken Marsala: 2 chicken breasts
6 oz whipping cream
half an onion
2 tbls garlic
6 musrooms
1 portabella mushroom
(remove the brown spores)
half cup lemon juice
2 oz marsala cooking wine
- Put a burner on medium. Put salt and pepper on both sides of the chicken, then bread both sides (flour + beaten eggs + bread crumbs). Cook in oil and butter until browned, not fully cooked. Put chicken to the side.
- With the remaining butter and oil mix, add to the pan: chopped onion, chopped garlic, chopped mushrooms, lemon juice and water. Don’t cover! Let the juices evaporate for about 5-10 mins.
- Add whipping cream and chicken. Cover and let simmer for 10 mins.
Serve with rice. (This recipe is amazing!! )
Tip: You can also do this with pork, fish, or beef. You can substitute the marsala cooking wine for maderia cooking wine/sherry/cooking sherry.

makes 60 (if you don't eat all the dough!)
Cookies: 2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
1-2 tsp vanilla extract
2 eggs
2 cups chocolate chips
- Preheat oven to 375f
- In a small bowl, mix flour, baking soda and salt. In a bigger bowl mix butter, sugars and vanilla until creamy. Add eggs a mix well. Gradually add the flour mixture.
- Mix in chocolate chips (you can also add 1 cup of chopped nuts if desired).
- Take rounded teaspoons of cookie dough and put on a baking sheet. Cook for 9-11 minutes… or, just eat the cookie dough little by little!
Cookie dough can be refrigerated for 1 week or frozen for 2 months.
